We love a gorgeous green latte, but cooking with matcha takes our obsession to a whole other level (and mornings have never been better). We recently stumbled upon these vegan coconut matcha pancakes by Canadian plant-based food blogger Jocelynne Flor, and our infatuation has been spiraling since.
The recipe below from High-Protein Pancakes is similar, but with the addition of rolled oats, no flour at all is used. Maple syrup in the batter means no refined sugar and all that matcha powder means a healthy dose of antioxidants. Best of all? These matcha pancakes can be whipped up in a blender as quickly as a morning smoothie! Make them to brighten up a lackluster Monday or for a weekend brunch powered by matcha madness... [olists num=1]
