The 2nd location of Kismet Rotisserie opened in Studio City at The Shops at Sportsmen’s Lodge May 31 and co-founders, Sara Kramer and Sarah Hymanson plan to open a third location in Culver City later in the year.

Is a 4-day work week a healthier work week? How do 24h movement behaviors change during and after vacation? A cohort study | It’s no surprise that the COVID-19 pandemic has changed the work landscape indefinitely. It’s important for a lot of people to live a balanced and healthy work life balance. Health researchers from Australia found that many are “all in” on the idea of a four-day work week and a long weekend. This new empirical research shows that extra time off can be beneficial for one’s health. By evaluating variations in daily activities prior to, during, and after vacation, the researchers discovered that individuals exhibit more energetic and healthy habits when they are on vacation, even if it's just a brief three-day break. If research continues to look at how our habits change when we’re away from our usual routines, it could have significant changes in the ways we work, live and play.

Can the Mediterranean diet reduce dementia risk? Mediterranean diet adherence is associated with lower dementia risk, independent of genetic predisposition: findings from the UK Biobank prospective cohort study | In my upcoming documentary, Little Empty Boxes, I openly discuss my mother’s battle with dementia, which has fueled my passion for sharing the latest research in health and nutrition to better our well-being. A recent study published in March of this year, found that the Mediterranean diet, a diet that is rich in seafood, fruit, vegetables, nuts and olive oil, may lower the risk of dementia. An analysis of data from more than 60,000 seniors revealed that choosing to follow a Mediterranean diet reduces a person’s likelihood of developing dementia by nearly one quarter. The new research adds to the mounting evidence that diet can impact brain health overall, in particular the risk of dementia—even in people who are at a higher risk because of their genes.pressed almond milk

Do almonds increase gut-healthy butrate? The impact of almonds and almond processing on gastrointestinal physiology, luminal microbiology, and gastrointestinal symptoms: a randomized controlled trial and mastication study | Protein and fiber are both nutrients I always look for to have in my snacks. A research study, funded by the Almond Board of California, found that eating almonds may benefit some gut microbiota functionality. This clinical research found that consuming this nut significantly increased butyrate, a specific microbiota byproduct. Butyrate has been shown to be associated with several health benefits like improved sleep quality and fighting inflammation and reduced risk of colon cancer. Research like this that looks at specific areas of our gut microbiota, like butyrate, helps inform consumers on all the different aspects of our gut health.

Large-scale network connectivity and cognitive function changes after exercise training in older adults with intact cognition and mild cognitive impairment | Walking is powerful! In a new study, 12 weeks of walking for 30 minutes, four times a week was found to improve memory function and neural connectivity in both cognitively healthy older adults and those with cognitive decline. The exercise involved walking at a pace tailored to their heart rate, with a brisk walking speed typically around 3 miles per hour. The results revealed that the participants, even individuals with cognitive decline, demonstrated improved performance on memory tests compared to their sedentary counterparts. Not only that, but brain scans revealed stronger neural connections, which is a promising indicator of enhanced brain function. This study continues to show how getting physical movement has powerful impacts to mental and physical health.

Almond intake alters the acute plasma dihydroxy-octadecenoic acid (DiHOME) response to eccentric exercise | To me, being active and doing what you can to help strengthen and take care of your body is important. But one under-appreciated aspect of physical health is recovery. This new study, funded by the Almond Board of California, showed how snacking on almonds helped reduce fatigue and tension during muscle recovery, compared to a calorie-matched cereal bar. New studies like this one show that consuming almonds can be the newest addition to sports nutrition trends to help people recover better from exercise and experience a better mood state.

The Post-Vacation Detox:
A One Day Plan

01. Start Your Day With Lemon Water. Begin the day with a nice cup of warm water and up to one half of a freshly squeezed lemon. Warm lemon water helps to cleanse the system and kickstart your digestion for the day and it's a great way to set the tone for a healthy, hydrated day.

If your vacation left you feeling sluggish, consider starting every day with lemon water for a week or more. Don't worry, you can always drink plenty of coffee afterward!

02. Get grounded. If you can, step outside early in the day and get your bare feet on the ground. Whether that means a few deep breaths in the backyard or a quick stroll around the block, many health pros believe that direct sunlight early in the day can help you to overcome jet-lag and sleep better at night. If you really want to dive in here, try this grounding meditation...

Find a comfortable place to sit in easy pose, close your eyes and start focusing on your breath — in through your nose and out your mouth. Imagine a rope extending down through your being, down through the ground, and deep into the core of the earth. Feel anchored. Take a moment to embrace this feeling of grounded connection. Notice how different this feels then how you may have felt in a new place or while flying. Sit anywhere from 2-20 minutes. When you are ready to end the meditation, gently move your fingers and toes, rub your palms together and place them over your eyes as you slowly open your eyes and expose them to the light.

03. Set an intention Take this time to set an intention for the day and don't be afraid to be practical. Most of us feel a bit of guilt if we're tired after a vacation knowing that we have tasks to return to. Decide to let that go now.

Here are a few great intentions for your first few days home from travel:

- I'm going to allow myself to gently acclimate back to being home today.
- I'm going to give myself everything I need to nourish and recover this week.
- I'm going to approach today with a sense of humor and a lot of grace.

Irresistible Mini Strawberry Galettes From Sweet Enough By Alison Roman

'Tis the season of strawberries. And deceptively simple strawberry galettes like these ones from the new cookbook, Sweet Enough make for the ultimate summer indulgence.

Alison Roman has distilled her years of experience as a pastry chef and cookbook author to bring us dozens of casual dessert recipes with all the fun and charm we've come to expect from the NYT best-selling author.

Prep a batch of these decadent galettes based on Roman's never-fail pie crust recipe for the 4th of July or any backyard celebration this summer...

Tiny Strawberry Galettes

Not all fruit is interesting enough to carry a small handheld galette on its own without the need for additional flavors or faffing, but in-season strawberries absolutely are. The perfectly juicy little orbs transform in the oven; juices bubble up and evaporate, concentrating flavors, while the texture and shape stay intact, firming up not unlike a semi leathery sun-dried tomato. What comes out is a better strawberry than what went in, baked inside a personalized flaky, caramelized crust.

Makes 8 galettes

Ingredients:
2 discs The Only Pie Crust (recipe below)
All-purpose flour, for dusting
1½ lbs strawberries, hulled and quartered (or chopped if especially large)
3 tbsp cornstarch
⅓ cup sugar, plus more for sprinkling
2 tbsp fresh lemon or lime juice
½ tsp rose water or orange blossom water (optional)
1 large egg
Finely chopped pistachios, pecans, almonds, or hazelnuts (optional)

Directions:
1. Preheat the oven to 375°F. Line two baking sheets with parchment paper.
2. On a lightly floured work surface, roll each disc of dough out to about 14 inches in diameter, give or take; make sure that the dough is evenly rolled, with no parts thicker or thinner than the other, even if that means an uneven circular shape. Cut each dough round into 4 even quarters and transfer to the lined baking sheets. Refrigerate while you prepare the filling.
3. In a medium bowl, combine the strawberries, cornstarch, sugar, lemon juice, and rose water (if using). Toss once or twice to combine.
4. Remove the dough from the fridge. Working with one at a time, remove a piece of dough from the lined baking sheet. Spoon strawberry mixture in the center of the dough, leaving about a 1-inch border of dough, piling it higher rather than spreading wider.
5. Fold up the edges just over the edge of the fruit, making more of an imperfect circular shape rather than reinforcing the triangle shape from whence it came. If you notice any large tears or cracks, simply patch them up by pressing the dough back together until sealed. Return each small galette to a lined baking sheet.
6. Whisk the egg with a teaspoon of water and brush the edges of the crust with the egg wash. Sprinkle with any finely chopped nuts you may be using (if you’re using) over the crust, followed by a nice dusting of sugar.
7. Bake, rotating the baking sheets once or twice until the crust of the small galettes is deeply browned like a graham cracker and the filling is bubbling, looking thick and shiny like melted fruit leather, 35–40 minutes. Remove from the oven and let cool before eating.how to make strawberry gallette

Eat with: A scoop of any ice cream you’d want to eat with strawberries. (This one is our fave!)
Make ahead: Tiny galettes are great made in advance and great for travel. They’ll last at least 2 days, tightly wrapped and stored at room temperature.
Note: For those lacking in the perfectly ripe, juicy berry department, these galettes will still produce something delicious with even subpar fruit (again: baking is magic). Other fruits to consider are rhubarb (unpeeled, cut into 3-inch-ish pieces) or raspberries (as is).

'The Only Pie Crust'

I believe in this recipe so much that I keep republishing it every chance I get, in every book I write. It’s flaky, it’s buttery, it doesn’t require a food processor (in fact, I’d recommend against using one) and 98 percent of people who have made it have success with it 100 percent of the time. My tip here is to resist the urge to add more water—pie dough should never look like a smooth, shiny dough. The flour in the dough will hydrate as it sits, transforming from shaggy to more supple once rested. Remember, pie crusts are meant to be flaky, shatteringly crisp. Not doughy or cookie-like. Keep that in mind when the dough looks, well . . . flaky. That’s a good sign!

Makes 2 discs

Ingredients:
2½ cups all-purpose flour, plus more for rolling
2 tsp sugar
1 tsp kosher salt
10 oz unsalted butter, cut into 1-inch pieces, chilled
1 tbsp apple cider vinegar or distilled white vinegar
¼ cup ice cold water, plus more only if you absolutely must

Directions:
1. In a large bowl, whisk together the flour, sugar, and salt. Add the butter and toss to coat it in the flour mixture. Using your hands, smash the butter between your palms and fingertips, mixing it into the flour, creating long, thin, flaky, floury, buttery bits. Once most of the butter is incorporated and there are no large chunks remaining, dump the flour mixture onto a work surface.
2. In a measuring cup, combine the vinegar and ice water and drizzle it over the flour/butter mixture. Run your fingers through the mixture like you’re running your fingers through your hair, just to evenly distribute the water through the flour until the dough starts coming together.
3. Knead the dough a few more times, just to gather up any dry bits from the bottom and place them on the top to be incorporated. You will be tempted to add a tablespoon or two more water now—resist if you can, add only if you must.
4. Once you’ve got a shaggy mass of dough (it will not be smooth and it certainly will not be shiny), knead it once or twice more and divide it in half. Pat each piece into a flat disc about 1 inch thick. Wrap each disc individually in plastic wrap and refrigerate at least 2 hours.

Make ahead: The pie dough can be made and refrigerated for up to 1 week; frozen for up to 2 months.

The matcha is harvested from only the top leaves of each plant in small batches and a few weeks before harvest, the tea fields are shaded to reduce the production of tannins, preserve the highest chlorophyll content possible (read: neon green, nutrient-dense tea!), and increase the L-theanine and caffeine content.  

Sourced from small family farms in the regions Uji and Kagoshima, the color alone is some of the most vibrant I've ever seen! The flavor is bright and creamy without the chalky bitterness of a few other matcha lattes I’ve tried. The Kagoshima region is known for producing Japan’s finest organic matcha, where the rich volcanic soils of this southern region of Japan imbue a nuanced flavor not possible to achieve in other soils.

Coffee, Matcha – Or Both?

I'm not an all-or-nothing person, so coffee and matcha both find a place in my routine now. If you love coffee, but can't imagine giving it up 100%, I understand that! You can still gain so many benefits from adding matcha to your routine. Here are a few ways that I recommend slowly incorporating matcha so you can feel the difference:

+ Save coffee for the weekends, and drink matcha during the week.

+ Go two weeks on matcha, and two weeks on coffee.

+ Swap your second cup of coffee for matcha. It's ideal to swap your first cup of coffee for matcha as coffee on an empty stomach can mess with your digestion.

+ Don't reach for an afternoon cold brew, try a matcha latte instead.

+ Save coffee for social settings (meetings, etc.).

Finally, How To Make the Perfect Matcha

Whip out your blender or electric whisk and combine ½ tsp (1g) of matcha powder with 6-8 ounces of water. Blend and enjoy your matcha alone or with a splash or your favorite milk.

Want to get traditional about it?

Add ½ tsp (1g) of matcha powder into a ceramic cup or ceremonial tea bowl.

Pour 1-2 ounces of hot water, mix with a bamboo whisk, and blend until smooth.

Slowly add an additional 4-6 ounces of hot water or your favorite milk, depending on the preferred strength.

Nutritionist Serena Poon Reveals Her 11 Most Important Wellness Habits

01 Hydrate | Every cell in your body is made up of water, and all your systems run better if you stay hydrated. I usually recommend that people drink their body weight in ounces each day (so if you weigh 120 lbs, you would drink 120 oz of water each day). I start my day with about 24-30 ounces of warm water with fresh lemon. The warm water serves to stimulate the gastrointestinal tract and peristalsis to keep things moving, while lemons help loosen ama, or toxins, in the digestive tract and quickly flush out these unwanted materials. My love for vintage started when… I was growing up, as I am a second generation antiques dealer so I don't know anything else. I have been around antiques and vintage my entire life. I have only ever valued things that were old and had an unique point of view.

Best tips for caring for vintage: When it comes to leather, I recommend snagging Blackrock Leather N’Rich—it conditions and cleans leather pieces and buffs out scuff marks well.

How to start vintage shopping for the inexperienced… It’s either in you or it’s not, and the only way to find out is immersing yourself in it. It’s a full creative process when it comes to vintage shopping, and you have to let the pieces speak for themselves and value them for what they are. Once you start collecting what you love, that’s when the process really begins and you’ll continue to keep an eye out for pieces that feel right for you. Sometimes this may mean reaching out of your comfort zone to find the vintage conversation piece your space needed all along.

Negotiations for dummies: 3 things you wish everyone knew… 01 Never give them a price. I Tried Hyperbaric Oxygen Therapy At Two Of L.A.s Premier Wellness Spas. Heres What I Learned

HYPERBARIC OXYGEN THERAPY Los Angeles

A few months ago, a friend of mine reported that she had taken up daily hyperbaric oxygen therapy treatments (HBOT) to help her recover from recent surgery.

“I don’t know what it is, but my doctor recommended I do it to heal faster.”

As a wellness warrior, I immediately took to the internet to get a deeper look into what this Hyperbaric Chamber of Secrets could possibly entail. Was it witchcraft? Was it a submarine? Was it fringe? Was it new? Smaller than a sauna, and much stranger looking, I needed to know more.

To my surprise, my Google search yielded over six million results in less than one second. When I brought it up to my editor, she mentioned that a few wellness aficionados she knew had installed hyperbaric chambers at home. It turns out that high-performing celebs like Cristiano Ronaldo, LeBron James and even Justin Bieber reportedly use them too.

In study after study, I quickly discovered that HBOT has been used as a healing modality for centuries. Dr. Jonathan Leary, Founder and CEO of Remedy Place, explained to me that during HBOT, you are increasing the concentration gradient between the air in the atmosphere and the air in your lungs. As the pressure brings you below sea level, this helps push more and more oxygen into your body. The increase of oxygen saturation helps to expedite your body’s healing processes.

With science on my side, I knew I had to try HBOT for myself.

How Does Hyperbaric Oxygen Therapy Work?

In recent years, many wellness centers have begun offering HBOT as a facet to one’s biohacking or health regimen. In my research, I also discovered a hyperbaric chamber that's bigger than some NYC apartments -- a real find for those who break a sweat just thinking about climbing into small spaces. More on that below.

Not all hyperbaric chambers are used for the same purpose:

Medical-grade chambers, also known as “Hard Chambers” or “High-Pressure Chambers,” are FDA-approved devices that can be found in hospitals or treatment centers, used to treat open wounds, broken bones, infections, embolisms, carbon monoxide poisoning, and a whole lot more. In recent years, HBOT has gained a ton of traction with Covid long-haulers, showing significant improvement with brain fog, trouble breathing, and fatigue with just 10 sessions. These chambers deliver 100 percent oxygen, reaching atmospheric pressures equal to 33 feet or greater below sea level. Did your ears just pop? Mine did!

Mild-pressure chambers, also known as “Soft Chambers,” on the other hand, are more commonly used as wellness devices for less intensive treatments. Originally developed as a temporary, portable treatment for divers and mountain climbers in the throes of decompression syndrome and altitude sickness, mild chambers leverage condensed air (about 24 percent of pure oxygen) and a lower atmospheric pressure.

When I asked Dr. Leary how people are using mild pressure chambers in the wellness space, he said, “I started using them with my patients post-injury/trauma and with my athletes that wanted to recover faster from their training. I have seen huge success with both use cases! With so many people experiencing increased stress, which ends up harming the body’s healing process, I’ve also seen HBOT work as an effective decompression tool for my patients to calm them down and feel rejuvenated!”

If you have any lung disease or ear complications, definitely chat with a doctor first since HBOT can tax your middle ear with all of the pressure changes. Here’s how it felt when I got filled with (not hot) air.

My Time In The Hyperbaric Chamber...

Since L.A. is the mecca of all things wellness, finding a good place to try HBOT was not a heavy lift. There are many hyperbaric chamber options in medical facilities like plastic surgeons’ offices and hospitals like UCLA, but a growing number of health and wellness centers are now offering HBOT too...

Remedy Place | My first HBOT experience was with Remedy Place. Walking into their West Hollywood location was like walking into an Ex Machina-inspired wellness nightclub for the rich, famous, and heavily optimized. Known as a social wellness club, I was thrilled to be in the mix at RP, and I didn’t even have to kiss any bouncers to get in (you should never have to do that!).

The Remedy Place team had thoughtfully curated a plan—a wellness stack, if you will—so as to boost the efficacy of the HBOT treatment. My wellness stack included:

Step 01 | Infrared Sauna: I began with an hour-long, private infrared sauna session to promote blood flow, detoxification, lymphatic drainage, and muscle recovery.

Step 02 | Pre-Cold Plunge Breathing Exercise: I was shepherded to a dark, sexy, velour room, where I listened to an 11-minute Wim Hof-esque breathing exercise, guided by Dr. Leary himself to help my body prepare for the very cold plunging ahead of me. It was also going to help my lungs activate for a deeper HBOT session later. Let me tell you, I was almost high from such intense belly breathing.

Step 03 | Cold Plunge: My “Cold Plunge Coach” (let’s call him) sat with me for SIX MINUTES as I was neck-deep in a 39-degree cold plunge. Even though I stopped feeling my fingers and toes, I was eu-phor-ic and pain free upon exiting.

Step 04 | NAD+ Injection: NAD+ (Nicotinamide Adenine Dinucleotide), which is sensational for mitochondrial health, has been touted for its powerful longevity and anti-aging benefits. Dr. Leary loves to infuse the body with nutrients (IV or injection) before hyperbaric because HBOT helps aid the transportation of those nutrients for more efficacy.

Step 05 | HBOT: Finally, the time had come. I was transported to a room with two capsule-like contraptions (also known as monoplace chambers) that were on the ground. “Are you sure you want me to get in there?” I asked their manager. After I was settled, I was told to expect some ear popping—similar to what you’d experience at elevation on a plane. I had the option to either lie in complete darkness for an hour-long air-nap, or watch my current show on an iPad (yes, you can totally bring a computer and do work in there if you’re trying to combine work and wellness).

As a restless Virgo, I opted to watch Emergency NYC during my therapy so I could cry and optimize, optimize and cry, which I think was good for my breathing exercises!

The hour flew by, and before I knew it, I was waiting for the air pressure to release before being helped out of the capsule chamber. I felt energized, any muscle soreness I had had from my days’ workouts prior had diminished, the whites of my eyes were shockingly white. I wondered how I could transform my life to become a daily member of Remedy’s very cool club.

Oxynergy2 longevity spa | My second hyperbaric experience was with Oxynergy2 in Beverly Hills. What drew me to this space was the state-of-the-art equipment founders Michele and Cloe Bohbot have filled the space with. Everything is a notch above what I’ve seen so far in the wellness space. That’s because their practices and therapies are focused on the medical nature of one’s health and recovery.HYPERBARIC OXYGEN THERAPY LA

Michele created a highly curated afternoon of wellness to help showcase the benefits of her next-level hyperbaric machine. Here was my wellness stack:

Step 01 | Massage Chair: For 20 minutes, I was swallowed by a full-body massage chair (not the ones you sit in at the nail salon) with an ice cold jade mask on my eyes. Every inch of my body was lymphatically massaged, compressed, decompressed, and released to get things moving and optimize the coming therapy.

Step 02 | Infrared Pod: For the next 20 minutes, I was cocooned in Oxynergy2’s infrared and red light pod, which I have certainly never seen before. Michele believes that starting with the therapy bed (heated or unheated) is ideal to target the circulatory system while reducing inflammation and tightening the skin. “Doing this service before HBOT will help increase blood flow and allow the capillaries of the lungs to accept more oxygen.”

In a short amount of time, I felt like all of the ATP in my body had been activated, and I even got a good sweat. Michele let me know that the pod is so powerful, she once saw a man sweat out metal. I gotta go back.

Step 03 | HBOT: While Oxynergy2 does have a monoplace chamber like Remedy, they also have a few multi-place chambers, which can be added to the list of things you’ve surely never seen before.HYPERBARIC OXYGEN THERAPY

I was gracefully led into what can only be described as a Hyperbaric Office. Unlike the ground-level chamber that most people are familiar with, Oxynergy2’s multi-place chamber is ideal for the claustrophobic type, who can NOT be in a confined space for any length of time.

For 30 minutes, I was able to sit upright comfortably in my Hyperbaric Office chair, facing a large-screen TV, with oxygen tubes up my nose, thanks to Michele. While my first HBOT experience was enclosed in darkness, the multi-place chamber was super light-filled, as if I was on a flight simulation with endless leg room and no checked baggage (emotional or otherwise).

Similar to my first experience, the only discomfort came from needing to pop my ears at the very beginning, but Michele was extremely mindful to adjust the pressure so as to maintain optimal comfort.

Michele recommends that the most ideal stack for anyone interested in HBOT would be to start with an infrared session, 15 minutes of exercise to increase your cardiovascular system, followed by 90 minutes inside the chamber. Guests can also follow up with their Compression Lymphatic Drainage Therapy to spread the oxygenated red blood cells around the body for the ultimate detox. Lastly, she suggests replenishing the body with clean fluids, electrolytes, and natural vitamins with their IV Vitamin Drip Therapy. “All of this can be done in three-and-a-half hours, and it will be the best spa day you’ve ever invested in.”

Beet Salad From Full Moon Suppers at Salt Water Farm

Whole food cooking doesn't stop at the stem. This baby beet salad uses both the sweet bulb and the nutrient-dense leaves for a summery salad we couldn't wait to share.

We first shared this beautiful beet salad recipe from Full Moon Suppers in 2017 and its a favorite to this day. From the utterly charming cookbook by Annemarie Ahearn, the founder of Salt Water Farm Cooking School, learn to make this filling beet dish by heart and make throughout the seasons.

Annemarie grew up on a farm on the coast of Maine where food was central to family gatherings. At Salt Water Farm, she now teaches chefs from around the world about making the most of the seasons; not just by using what is growing at the moment, but finding delicious, creative ways to waste as little of it as possible.

Young root vegetables with small, tender greens should be considered whole ingredients. The greens are treated differently from their roots, but they are just as edible. Clean them thoroughly and cook them just enough to wilt them. At this young stage, their flavor is earthy and sweet.

Baby Beet Salad with Beet Greens, Fried Garlic + Chèvre

Serves 8

INGREDIENTS:

a mix of small, colorful beets and their greens (about 12 small or 6 medium-size beets)
3 Tbsp olive oil
1 splash red wine vinegar
1 garlic head, cloves separated and peeled
½ cup fresh chèvre
kosher salt
fresh ground pepper
sea salt to finish

DIRECTIONS:

Preheat the oven to 400°F.

Separate the beets from their greens and wash the greens. In a large baking pan, combine the beets, 1 tablespoon of olive oil, red wine vinegar and an inch of water. Cover with aluminum foil and bake for 35 to 45 minutes, or until fork-tender. Peel beets under cold water, discarding the peel and slice into wedges.

Remove root ends of garlic cloves and slice cloves very thinly. In a large cast-iron pan, slowly heat the remaining olive oil over medium heat. Add garlic slices and fry until they are golden but not brown. Add the beet greens and turn off the heat. The residual heat from the pan will wilt the greens.

On a platter, lay down the beet greens and the garlic and arrange the beet wedges over the top. Season to taste with sea salt. Garnish with pinches of fresh chèvre, allowing the heat from the beets to melt the cheese.
