What You Need to Know About the Full Moon in Gemini + Partial Eclipse Monday

SPIRITUAL SIGNIFICANCe | We have officially entered eclipse season and are moving through several extremely powerful astrological transits until the end of the year.

This Full Moon in Gemini on November 30th is also a Penumbral Lunar Eclipse, leading into the Total Solar Eclipse on December 14th and then into the Great Conjunction of Jupiter and Saturn on Winter Solstice, December 21st. Eclipses greatly heighten the effects of the lunation, and this transit is about finding completion in certain areas of our lives and communicating our needs and desires for the future. While conjunction of Jupiter and Saturn happen every 20 years, the Great Conjunction on Winter Solstice is the first time Jupiter and Saturn have been this close for 400 years.

"The energy of these eclipses alongside the conjunction helps usher us into the Age of Aquarius, an era of rebellious innovation and creating new ways of being and existing in the world."

This time period is the exhale before the inhale of 2021.

OVERALL THEMES TO EXPLORE…Taking Inventory. Completion. Communication. This moon is called the Beaver Moon and speaks to taking inventory of the year and the preparation for winter. As we wind down 2020 and embark upon this transformational transit into the Age of Aquarius and a new year, we have the opportunity to take stock of the lessons we’ve learned, what transpired to bring us to our current moment in time and to tune in deeper to our needs as well as hopeful desires for our individual and collective future. 

What is ready to come to completion? What do you truly need in your life to create a strong foundation to allow for more flow and deep alignment? What or who in your life is no longer supporting your highest expression of self? What is it you wish to see different in your life and in the world? How can you trust and surrender to a greater unfolding of your life even in times of uncertainty? 

My new book “Crystal Healing for Women” contains a wonderful meditation for this full moon called “Surrendering to the Universe Ritual” that is highly supportive during times of transformation by helping one lean into trust and surrender of their journey. 

HOW YOU MAY FEEL… Eclipses amplify the lunar energetics and you may be experiencing extremely heightened emotions or bursts of creativity and excitement. You might also have feelings of fatigue, frustration, and energetic depletion.

Oftentimes we “feel it as we heal it” and residual confusion, fear or anxiety from this year and of the future might come up in this time to be integrated, felt and released. It is a great time to honor all that you have moved through and overcome this past year in order to come to a place of completion. We are physically and energetically making room for this new era and with endings, come new beginnings. Allow yourself to stay present with your emotions and feel all that is coming up for you in this time. 

EXCELLENT TIME TO…  Journal, paint, sing, dance, cook, go for a jog, move your body and allow the energies of this cycle to move through you. Gemini is the ruler of communication and it is an excellent time to communicate your thoughts, feelings, emotions and hopes for the future in whatever way feels good for you.

Try not to bottle anything up right now and allow the energy and emotions to flow. Remember to try and stay grounded in these highly charged energetic periods and not to unleash on others, instead write, journal, jog, or punch a pillow if needed, but simply allow for the release.

Alfia’s Maple Cinnamon Sweet Potato Muffins (Leftovers Reborn!)

You'll need fuel to blitz those online Black Friday sales. And we've got a clever leftovers recipe from chef Alfia Muziois that's just the ticket. 

Alfia, an alum from Bon Appetit and the beloved Prune in NYC, now runs Vestal a personalized kitchen coaching service with the mission of "helping busy parents put healthful meals on the table with a minimum of stress and a maximum of grace". Here is just one of her genius cooking hacks that's both sustainable and divinely delicious...

There’s nothing quite like Thanksgiving leftovers, but by Saturday morning, things might be looking a little, well, tired. If by any chance you manage to have leftover sweet potatoes and you’ve had your fill of mashing them into your Friday afternoon sandwich, why not turn them into something completely different?

With an extra sweet potato or two, you can make these light little muffins, spiced with cinnamon and a hit of ground ginger, sweetened only with maple syrup and not an ounce of butter in sight, they might even get your metabolism up and running again! On the other hand, if you’re still into indulging, they go perfectly with a quick swipe of cream cheese frosting. They come together super easily either way, and if you do go for frosting, we won’t tell! 

Maple Cinnamon Sweet Potato Muffins

 

Ingredients
Makes 10-12 muffins

1 ½ cups (190 g) all purpose flour (whole wheat or gluten free works!)
1 tsp baking powder
1 tsp salt
½ tsp baking soda
1 tsp cinnamon
¼ tsp ground ginger
2 cups (375 g) cooked sweet potatoes (from 1 large or 2 medium sweet potatoes), skins removed, mashed with a fork
⅓ cup (75 g) melted coconut oil
⅔ cup (225 g) maple syrup
2 eggs, at room temperature

For cream cheese frosting (optional)
1 cup cream cheese
½ cup unsalted butter (1 stick), softened
½ cup confectioners sugar
½ tsp vanilla extract

Method
Preheat oven to to 350F

Line standard muffin tin with paper liners.

In a large bowl, combine all dry ingredients - flour, baking powder, salt, baking soda, cinnamon and ginger. Whisk to combine thoroughly.

In a blender or food processor, combine sweet potatoes, oil, maple syrup, and eggs. Blend on high until completely smooth and slightly aerated.

Pour liquid mixture into dry ingredients and stir gently until combined, being careful not to over mix (too much mixing means tough muffins!)

Evenly distribute batter into muffin tins, filling cups just about to the top (you should get 10-12 muffins).

Bake in the middle of the oven for 25-30 minutes. Muffins should be puffed up and dome shaped, and a toothpick inserted in the center should come out dry. Let cool completely before frosting.

For the frosting
To make cream cheese frosting, combine all ingredients in the bowl of a stand mixer (or a large bowl if using a handheld mixer), and beat until fluffy and smooth, taking care to scrape down the sides, about 3 minutes.

Mashed Potatoes Are Cancelled: Meet Root Veggie + White Bean Mash

This root veggie mash and white bean mash recipe from Kristin Dahl's lovely new digital cookbook, are simple and tasty alternatives to mashed potatoes that are much higher in nutrients.

Standard white russet potatoes tend to be quite high on the glycemic index and can therefore cause spikes in your blood sugar level, which can affect your mood, weight, and long-term health. Opting for root vegetables or beans instead offers a lower carb and lower glycemic option while still enjoying all the creamy goodness of mashed potatoes. Although potatoes themselves aren’t necessarily bad, vibrantly-colored root vegetables and fiber-rich beans both offer higher levels of vitamins & minerals.

This mash can be made two ways: with root veggies or with white beans. If you’re using root veggies, keeping the skins on the vegetables boosts the fiber content. Making your mash with white beans increases fiber and protein content & offers a bit more texture. Mixing them with fresh herbs and ghee is a lovely alternative to the heavy cream, salt and excessive amounts of butter found in traditional mashed potatoes.

Here are the highlights of the nutrient-packed ingredients in these veggie mashes:

Butternut squash, carrots, yams, and sweet potatoes: All are packed with a variety of nutrients and antioxidants including vitamin A & C, which support immune health. 

Japanese sweet potatoes: These starchy roots are super high in vitamin A, potassium, and iron, aiding in immune function, water balance, and energy levels. This potato also contains high amounts of fiber, which is beneficial for heart health and improved digestion. 

Sage & thyme: Both are immune-enhancing herbs that also support digestion and lower inflammation.  

Grass-fed butter & ghee: Grass-fed butter is high in calcium and vitamin K2, which helps with the assimilation of vitamin D. Ghee is a lovely lactose-free alternative that’s considered liquid gold in Ayurvedic medicine for its gut-healing and restorative properties. 

Celery: Celery contains a healthy amount of fiber, which can help improve digestion and ease constipation. It can also improve immune function due to its multiple anti-inflammatory compounds. 

White beans: These legumes are an excellent source of protein and fiber. They contain both soluble and insoluble fiber, helping to improve digestion and lower LDL cholesterol levels. Beans also contain viscous fiber, which absorbs water and creates a thick gel-like substance in the digestive tract, helping to stabilize blood sugar levels, bulk stools, and alleviate constipation. 

ROOT VEGGIE MASH

PREP 5 MIN | COOK 10-20 MIN 

Ingredients

½ cup cubed Butternut squash

1-2 carrots, cut into chunks

½ sweet potato or yam, cubed

1-2 parsnips, cut into chunks

2 tsp dried sage

2 tsp thyme

½-1tsp of Maldon or Himalayan sea salt

2-3 tbsp grass-fed organic ghee or butter (alternatively, you can use extra virgin olive oil)

*optional – squeeze of fresh lemon juice, few splashes of coconut aminos 

Method

Steam all veggies 10-20 mins

Strain

Add ghee or butter, herbs & sea salt

Mash with a fork or potato masher

WHITE BEAN MASH

PREP 15-20 MIN | COOK 30-45 MIN

Ingredients

2 tbsp of grass-fed organic ghee or organic butter, or extra virgin olive oil 

1 small sweet onion, diced 

1-2 stalks of celery, diced 

Pinch or two of Maldon or Himalayan salt 

2 cups of steamed yams or Japanese sweet potatoes, cubed 

1 cup of cooked white cannellini beans 

I tbsp fresh parsley, finely chopped

Method

Warm a medium saucepan on medium heat with 1 tbsp of ghee, butter or olive oil  

Add onion, celery & a pinch of sea salt 

Cook until tender & translucent, stirring frequently for 5-7 minutes 

Add sweet potatoes and white beans - cover with 1-2 inches of water & bring to a boil 

Turn heat to low & simmer for 8-10 minutes until tender

Strain & save a small amount of liquid for blending 

Mash with a fork or potato masher adding 1 tbsp of oil, butter or ghee & a decent pinch of salt 

Top with chopped fresh parsley & enjoy!

How to Look Good on a Zoom Date According to a Celeb Makeup Artist

Keep that top knot in tact -- or don't. When it comes to online dating lately, Zoom calls are everything and that presents a whole new challenge for almost everybody.

One person who was more equipped than just about everyone else for this dating environment was celeb makeup artist, Katey Denno. Katey had reams of experience making up A-list clients from Naomi Watts to Amanda Seyfried for red carpet and shoots, as well as the impromptu live videos that come up.

Equipped with all the best clean products, tips and tricks we knew Katey was the perfect person to turn to for our first Zoom beauty tutorial which was incredibly popular.

As the year progresses, we thought we'd hit up Katey from a different angle here: that of the Zoom date whose beauty requirements may or may not be a bit more glam.

It just so happens that Katey herself met her long-time boyfriend on Tinder, which only doubles our confidence...

How to Look Good on a Zoom Date

Katey helps top models and celeb clients to look their best on camera. Think she can help you on a Zoom date? You betcha.

Whats your vibe? Depending on your aesthetic and how much effort you're looking to put into your date, your skincare and makeup plan may follow suit. It's okay not to do anything. There's certainly nothing wrong with keeping that top knot intact and simply taking a call from bed, however, if you're in a new relationship and looking to keep those first date feelings, these beauty tips might help guide the way...

Lighting is everything As extra as it might seem, a circle light really is everything, filling in fine lines and washing out blemishes like nobodies business. If you're on a call during the day, find bright natural light or strip two lamps of their  lampshades (a pro photo shoot trick Katey  learned from top photographers with clients while traveling).

How to frame yourself: We've all been on that Zoom call with an unaware colleague shooting their angle directly up their nose at the least flattering angle. Don't be that guy - at least when it comes to a Zoom date. Ideally, capture your shot just above the elbow to the top of your head. Check the height of camera to be sure you're not shooting 'up your nose,' so to speak.

Low Glow: Sadly, one thing that Zoom can take away is the natural glow of the skin. Highlight your glowy skin with a bit more shimmer or luminizer than you would for an in-person date.

Balm up: Per Katey's notes on how to frame your shot, consider including the slightest bit of collarbone or decollate. If you do, toss on a bit of body oil on collarbones to keep skin looking bright through Zoom's flattening filter.

Highlights | Lowlights: Katey uses Kjaer Weis Lightslip Highlighting Powder Compact, a shimmering powder across collarbones and cheekbones to help skin stand out. Use a fluffy brush and go for it -- just remember: hit features you want to accentuate, not the whole face.

Pick a feature: Zoom can also be face flattening. That said, pick a feature -- whether eyes of lips -- that you'd like to accentuate and bring those out.

Lip lock: Line the heck out of your lips for a fuller look with a product like Kjaer Weis Lip Pencil in a pinky neutral that best matches your natural lip color. Layer on a touch of light-reflective lip gloss like Kosas Wet lip oiland let that pout be the star of the show.

Scented video? No, your date can't smell your perfume, but you can. A relaxing or romantic scent might set the tone and help you feel like you're on an actual date. This tip is just for you! Give yourself whatever you need to feel sexy and relaxed. Katey calls out relaxing essential oil blends, romantic perfumes, and even a bit of CBD oil - whether topical or internal - to keep your calm.

Ready to be extra?Fake lashes are great thing to experiment with for an online date -- they don't need to withstand the weather and the normal dramas of a date. All you've got to do is get them on and keep them on for a couple of hours at home!

Watch This:Vegan Gluten-Free Cornbread Stuffing From Annie Campbell

We gathered with Jenni Kayne way back when to prep for the upcoming Thanksgiving holiday and Annie Campbell's gluten-free cornbread stuffing is still heaven, all these years later! We couldn't resist sharing this blast from the past and the perfect recipe to memorize for years to come.

This stuffing is vegan, gluten-free and so delicious that no one around your table will miss a beat. Check out our recipe break down below and a download-able version of this recipe and the rest of our Thanksgiving menu from so many years ago here!

Gluten-Free Mushroom + Leek Cornbread Stuffing

INGREDIENTS

10 cups of day-old, gluten-free cornbread, or bread of choice, cut into one inch cubes*

4 T extra virgin olive oil or Earth Balance, more as needed

¾ pound of wild mushrooms, sliced

4 leeks, white and light green parts only, cut in half and sliced

1 ½ cups of sliced celery

1 cup of diced onion

1 cup of diced parsley

2 apples, peeled and diced

1-2 t fresh thyme, chopped

1 T fresh sage, chopped

2-3 cups of vegetable stock, more or less depending on texture

salt & pepper

TO PREPARE VEGETABLES | Heat a large sauté pan over medium-high heat and add extra virgin olive oil or Earth Balance butter.  Once hot, add leeks, celery and onion.  Season aggressively with salt and pepper.  Reduce heat to medium-low and sauté for 10 minutes, until softened.  Once vegetables are soft, add mushroom, apples, thyme and sage and cook for an additional 7-8 minutes, until mushrooms are soft.  Add olive oil, salt and pepper as needed.

Combine cornbread, cooked vegetables and parsley in a bowl.  Add vegetable stock until moistened but not soggy.  Place everything in a greased 9x13’’ baking dish or in a hollowed pumpkin or squash.

TO BAKE STUFFING | Bake dish in a 350 degree oven for 25-30 minutes until golden brown, or until desired doneness.

Cornbread can be made 1-2 days in advance.  All vegetables and herbs can be chopped 2 days in advance.  Vegetables can be sautéed 1 day in advance.  Stuffing can be cooked 1 day in advance and reheated in a 350 degree oven, covered with tinfoil, for 20 minutes or until warm.

Gluten-Free Cornbread
Adapted from chocolate covered katie

Ingredients

1 cup of rice milk, or milk of choice

1 T white vinegar

2 cups of gluten-free cornmeal

1 T baking powder

½ t baking soda

1 t salt

2 T sugar

2 T brown sugar, more for a sweeter cornbread

1 cup of frozen corn

3 T oil

¼ cup of applesauce

½ t cayenne, optional

1 T fresh rosemary, chopped, optional

To make the batter: Mix the milk with the vinegar and let sit for five minutes.  Combine cornmeal, baking powder, baking soda, salt, sugar, brown sugar, cayenne, rosemary and frozen corn in a bowl.  Add oil, applesauce and rice milk/vinegar and mix until combined.

To bake: Pour batter into a greased 9x9’’ baking dish and bake in a 400 degree oven for 25 minutes, until set.  A toothpick should come out clean from the center of the cornbread.  Serve with Earth Balance and honey.

Helpful tips: Cornbread is best served the day of but if using for stuffing, make 1-2 days in advance.

A Very Chalkboard Thanksgiving: Sustainable Turkeys + A Dry Brine Recipe From Flamingo Farms

We spend most October's shooting beautiful Thanksgiving spreads to inspire your holiday, but this season has been different. We've been making every effort to socially distance as the fall temperatures cool here in L.A., and yet we've managed to gather a few beautiful ideas for a small, but wonderful holiday at home, including these tips from a multi-generational, sustainable turkey farmer and recipe from a chef at a cool L.A. landmark we love...

This year's turkey comes from the Diestel Family Ranch, one of the only truly sustainable turkey ranches available nation-wide (find 'em at Whole Foods). We talked with Heidi Diestel, who is part of the fourth generation in her family to raise pasture-raised turkeys.

How to shop a turkey Out of the gate, Heidi urged us to, at the very least, shop for a turkey that was "antibiotic free and vegetarian fed". It's a good place to start if you're extremely budget-conscious or are just beginning to invest time learning where your food comes from, but the truth is, Diestel Family Ranch transcends those standards with organic, heirloom turkeys that are raised with regenerative farming practices and are certified non-GMO.

"Whenever possible, look for turkeys from independent farms that are transparent about their practices," Heidi advised. "For smaller farms like Diestel, we’re focused on quality, not quantity. Unlike bigger corporations that need to operate at maximum efficiency and scale, we can prioritize the turkeys’ health and maintain responsible practices that yield better, more nutritious turkeys that are slow grown and given plenty of room to roam."

Going small this year?  Many of us are cooking a smaller bird this year and looking for smart solutions. While we've got you covered on ideas for a full bird below, including tips from Heidi and this chef recipe, if you're down to get a bit casual about the whole affair this year, Diestel also offers a turkey roast that comes pre-seasoned in a BPA-free bag that pops easily in the oven. We're not mad at that idea for a year when many of us are celebrating sans the large family celebration.

A Rancher + A Chef: How to Cook A Turkey

If you're going to roast a full turkey, here are some tips from Heidi...

+ Temp awareness: There’s nothing more important than the temperature of your turkey on roasting day! Make sure your turkey is soft and fully defrosted before it goes in the oven.
+  Invest... in a good meat thermometer! It can make or break you nailing the 5°F window that makes turkey really sing.
+ On basting: You can baste your bird, but keep in mind that consistently basting turkeys throughout the entire roasting cycle will result in skin that’s moist instead of crispy. Whether or not you baste throughout, it’s always a good idea to have some type of liquid (broth, stock, water or wine) in the bottom of your roasting pan throughout the roasting process.
+ End well: The internal temperature of your turkey typically increases more rapidly during the last half of the roasting time. Be sure to check your turkey consistently during the last half of the roasting time to ensure you don't over roast the bird.
+ Rest: After roasting, let your bird rest for a minimum of 30 minutes under a foil tent. This allows all the moisture to seep back into the turkey, and your patience will be rewarded with a super juicy bird.

We also talked to the head chef at what is, arguably, L.A.'s coolest property, Flamingo Estate for her favorite holiday turkey recipe -- and she did not disappoint.

Flamingo Estate is the kind of place you think only exists in movies -- rambling orchards, impressive art collection, well-designed rooms that could tell decades of stories, plus a garden that now produces delivery boxes of fresh bread, fruit, veggies, candles and more. It's something of an obsession for those we know who've stumbled into what the Estate has to offer (and we love that they offer Lori Stern's insanely beautiful cookies!)

Here is Chef Ella Freyinger's version of the holiday bird roasted with the property's honey, fresh herbs, tamari and plenty of butter...

Flamingo Estate's Roasted Dry Brine Turkey

Ingredients:
1/3 cup Kosher Salt
1 12–14-lb. turkey
8 Tbsp. (1 stick) unsalted butter, room temperature, divided
¼ cup sherry vinegar or red wine vinegar
4 Tbsp. honey
4 tsp. tamari or soy sauce
6 sprigs thyme
3 sprigs rosemary
1 sprig oregano
1 teaspoon black peppercorns
3 garlic cloves, crushed

Instructions:
Place turkey on a wire rack set inside of a rimmed baking sheet. Sprinkle the salt evenly over the entire turkey making sure to get into all of the nooks and crannies. Some of the salt will fall into the baking sheet, which is fine. Place into the fridge, uncovered for at least 14 hours and up to 2 full days.

Remove the turkey from the rack and rinse the baking sheet, there will be liquid that pooled. Line the baking sheet with foil, making sure to get the rim as well. Place the turkey breast side up on the rack. Let sit at room temperature for 3 hours.

Preheat oven to 450*

Take 4 tablespoons of butter and gently pulling back the skin smooth the butter between the skin and the meat. For the butter to smooth evenly both the butter and turkey will need to be at room temperature. Tie the legs together using kitchen twine.  Add 1 cup water to the baking sheet, this will prevent the turkey drippings from burning to the pan.

Place turkey in the oven and cook for 15 minutes, rotate the pan and cook another 15 minutes.

Place the remaining butter, vinegar, honey, tamari, thyme, rosemary, oregano, black pepper and garlic in a small saucepot. Bring to a boil and reduce heat to medium. Cook for 6-8 minutes or until the glaze has thickened. Reduce temperature to the lowest heat possible to keep the glaze from hardening.

Reduce the oven temp to 325*. Continue cooking the turkey, basting with the glaze every 30 minutes and rotating the turkey. If the bottom of the pan beings to dry, add ½ cup water. After 60 minutes begin checking he temperature of the turkey. An instant read thermometer inserted into the breast should read 150. The turkey will continue to cook as it rests.

Remove the turkey from the oven and allow to rest for a minimum of 30 minutes and up to 1 hour.  Reserve all the delicious dripping in the pan for gravy! Transfer to a cutting board and carve.
