Zucchini Hummus Without Beans

Makes 2 cups

Ingredients:
2 large organic zucchini, peeled and chopped
2 tbsp olive oil
½ cup raw tahini
½ cup lemon juice
3 cloves garlic
2 tsp cumin
1 tsp salt
Fresh cracked pepper

Directions:
1. In a food processor combine all of the ingredients, blend until smooth.
2. Taste and adjust seasonings.
