No-Bake Pomegranate Rose Jelly Cheesecake With Elderberry

Prepare yourself for a delectable dessert/snack that's as tasty as it is nourishing. This collaborative recipe from Anima Mundi and Panaceas Pantry will satisfy your sweet cravings while delivering a powerful immune boost. Featuring a blend of Rose Powder and Black Elderberry Elixir, this treat is rich in Vitamin C and packed with immune-boosting benefits. Plus, with the addition of Lion's Mane, it’s not just delicious—it’s also a brain-boosting delight!

Recipe

Base

3/4 cup pecans/walnuts

1 Tbsp coconut oil

2 Tbsp desiccated coconut

1/4 cup Anima Mundi Heirloom Cacao 

6 medjool dates, pitted

2 tsp Anima Mundi Lion's Mane 

Add everything to a food processor and blitz until a dough forms. Press into the base of a lined loaf tin (or 8 inch square). Set aside. 

Cheesecake Filling  

1 cup raw cashews, soaked 4 hours then drained

250g cream cheese / labneh 

3/4 cup pomegranate juice

2 tsp vanilla 

2 Tbsp maple syrup 

1-2 tsp Anima Mundi Rose Powder

1 Tbsp lemon juice

1.5 Tbsp melted cacao butter OR coconut oil

Blend everything in a blender/food processor until very smooth. Pour over base layer, then set in the freezer for 2 hours. 

Pomegranate Elderberry Jelly

3/4 cup pomegranate juice

1 Tbsp gelatine 

2 Tbsp Anima Mundi Herbals Elderberry Elixir 

Add everything to a small saucepan. Stand for 5 mins, then heat just until gelatine dissolves. Remove cake from fridge, then pour this mixture on top. Transfer to the fridge to set (4 hours). 

Use a sharp knife to slice up into desired pieces.
