Skip the Griddle: The Easiest Sheet Pan Pancakes Ever

If you've mastered the art of whipping up a big batch of pancakes on weekend mornings, good on you. For the rest of us, who find the dripping batter a pain and don't like eating that last stack of cold cakes while the rest of the sticky-fingered crew moves on to coffee and more cartoons, this recipe could be a godsend.

We're not sure why we hadn't thought of this sheet pan recipe before! Perfect for mornings when pancakes are called for, but the crew is too big to make the silver dollar process practical.

This version from the Uncomplicated Chef was made for Pamela's, the female-founded gluten-free brand that's more than likely made it to your pantry once or twice if you eat GF. We love this apple, cinnamon and cranberry take, but the options are endless -- chocolate chips are a strong choice, as is a plain version with strawberries and maple syrup at the ready. You could also use traditional flour, milk and eggs, just watch your pancake in the oven to ensure the perfect golden brown.

Apple Cinnamon Sheet Pan Pancake

Ingredients
2 cups of Pamela’s Baking &Pancake Mix (follow package instructions for the batter)
1 apples sliced
1/4 cup of fresh cranberries (optional)
1/4 coconut sugar or plain sugar
1 tsp of cinnamon
Maple syrup for serving

Directions
Make the pancake batter as per package instructions.
Slice the apple
In a bowl mix apples and cranberries with sugar and cinnamon.
Pour batter on a baking sheet pan lined with parchment paper.
Top the batter with apples and cranberries
Bake on preheated oven 350 degrees for about 20 minutes until nice and fluffy.
Serve with butter and maple syrup.

10 Simple Ways To Boost Digestion

Have a cup of bone broth each morning. It’s delicious, full of amino acids that help repair your gut lining and other nutrients missing from the modern diet. Try Carla's recipe.

Before meals, chew on bitter leaves such as endive, chicory or radicchio, ginger or parsley, which aid digestion by stimulating digestive enzymes. Alternatively, have a shot of lemon juice or unpasteurized apple cider vinegar (two teaspoons of either in half a glass of warm water) half an hour before meals.

Eat appealing food. Did you know that the smell of delicious, appetizing food actually stimulates digestive juices before we eat? This priming process stimulates healthy digestion -- and is less likely to happen with unappealing food.

Eat when you’re hungry and stop when you’re full. Hunger signals that our digestion is ready for food while eating when not hungry can overtax the digestive process. It’s equally important to avoid overeating, which can cause the gastric juices and enzymes that assist digestion to become depleted, leaving you feeling full and bloated. Think of the stomach like a wood fire: Too much wood will smother the fire.

Don’t eat late at night. During sleep digestion virtually stops. If you don’t feel like breakfast upon waking, you’re probably eating too late and the food isn’t being digested properly. Try having a very light meal to see if you feel different in the morning. You’ll notice that your sleep improves and you have fewer vivid dreams.

Eat a diverse, balanced diet - and everything in moderation. By giving your bugs a varied diet, your gut reaction will be minimized if something is irritating.

Aim to have more plants on your plate than meat. This proportion is far healthier for promoting microbial health.

Eat more omega-3 fats and consume saturated fats like ghee, butter and coconut oil, but in moderation. While these saturated fats have health benefits and are healthier to cook with than refined vegetable oils, too much may upset your microbiome. Enjoy cold-pressed olive oil liberally on salads.

Go slow and don’t over-exercise. Stress and exercise can be taxing on our digestive system, so take it easy and keep your exercise regular, but moderate.

Remember the gut-brain axis. Breathe clean air, get involved with nature, garden, walk, meditate, practice gratitude and have fun.

The Truth About The Standard American Diet According to Dietician Maya Feller

We're not sure who first coined the term, Standard American Diet -- which, no coincidence, also reads 'SAD' -- but it has come to represent the dire facts regarding our nation's consumption of processed foods, sugar and conventionally-raised animal products.

Below, TCM contributor, Maya Feller, MS, RD, CDN unpacks the social, economic, ecological and, of course, health-based issues surrounding SAD... 

"Health is wealth." Such a simple phrase, yet it holds so much meaning. Let’s take a moment to unpack it. Living in the U.S. many of us strive for the American Dream of prosperity and upward mobility — in short, increased wealth.

The WHO (World Health Organization) defines health thusly: A state of complete physical, mental and social well-being and not merely the absence of disease or infirmity. That’s a mouthful and a tall order. The only way to realize the truth of 'health as wealth' is to reject the Standard American Diet (SAD) and the ideals that come along with it.

What Is The Standard American Diet?

The Standard American Diet (SAD) has often been characterized as a diet pattern that favors a high intake of 'fast' and processed foods that are mainly composed of refined grains, added sugars, lab-made fats, added salts and preservatives.

The horrifying part of the prevalence of the Standard American Diet is that its grip is pervasive and seeps into many parts of our daily lives — such as encouraging busy Americans to purchase packaged and pre-made foods as a staple rather than an occasional option in a hurry.

+ Data tells us that more than 50% of the population exceeds the recommended amounts of grains and proteins.
+ Most Americans go above the recommendations for added sugars, saturated fats and sodium.
+ Three quarters of the total population eat a diet that is low in vegetables and fruits.

This tells us that the SAD is not only mainstream, it’s the norm for most of us. Over half of all Americans have one or more diet-related chronic illnesses, specifically cardiovascular disease, some cancers, diabetes and high blood pressure.

Unexpected Consequences of a Processed Food Diet 

Medical costs associated with these diseases are in the hundred billion range. Yes, our food culture and industries have a direct effect on the wealth of the nation.

Let’s go one step further: Mortality rates in the U.S. are higher in comparison to other comparable countries. Americans die more often from circulatory diseases (think cardiovascular disease, diabetes, endocrine and metabolic disease) than in countries like Canada, France and the U.K. I find that very bleak.

The environmental impact of food also needs to be considered. We estimate that 30% of total greenhouse gas emissions can be attributed to agricultural production. To be clear, there are many farmers using sustainable farming practices, but the largest culprits are not small farms or produce farms.

The farms that tend to be the largest contributors to greenhouse gas emissions are large scale farms that produce animal proteins via unsustainable farming methods.

When looking at a spectrum of factors, plants have lower greenhouse gas emissions in comparison to animal proteins. I’m not suggesting that we all become vegetarian, but I am saying that we need to look deeply at how we interact with our food and how it is produced.

In my opinion, we as healthcare providers need to be talking with our patients about sustainable diets. We need to encourage our patients to step away from mainstream food norms and embrace food and nutrition patterns that support personal longevity, economic and ecological health.

An alternative to the Standard American Diet is one filled with the recommended vegetables, fruits and whole grains, thus decreasing the incidence of diet related chronic illnesses and their associated health care costs.

I challenge you, as you buy, prepare and eat your daily meals to simply ask yourself: How does this serve me, my health and our planet?

3 Definitive Signs It’s Time To Take A Mental Health Day

Sometimes feeling well means popping an extra adaptogen into our morning smoothie, other times it means pulling back for a day or two when our job or other life work has us feeling fried.

Over-achievers, halt the freakout; we're not trying to change you -- just make you feel a bit more well. The truth is we all struggle to sustain work-life balance from time to time. There's no shame in needing a break  -- or in actually taking that time for ourselves.

3 Definitive Signs That You're Due For A Mental Health Day

If you had a sprained ankle, you wouldn’t try to run ten miles, right? You’d listen to your body, ice it up and rest to avoid injuring it further. Same goes for our mental health. Sometimes, after a few 12-hour days or an upsetting personal event, our minds are screaming at us to just take a break — before we have a breakdown.

It’s not like you can X-ray your mind, find a sprain and call in sick. But there are signs of burnout that signal its time for a day of rest (or a day of Korean spa — whatever you need to recharge).

01. You’re more irritable than usual.

Working with the same people all day every day, some personality conflicts are inevitable. Still, watch out for any sudden changes in mood. Are you snapping at the situations that you’d normally just shrug off? Does every single request from your boss send you spiraling?

Let the unresolved tension simmer and you’ll snap — if not in an actual screaming match, then through the passive-aggressive emails nobody wants to get. Separate yourself for a day to calm down. It will help break the cycle.

02. Your work is unusually sloppy.

You’re rushing to meet a deadline and, inevitably, miss little details — punctuation, calculations, etc. Your boss calls you out and your anxiety ratchets up even more, starting a vicious cycle of stress, underperformance and self-blame.

We’re not perfectly oiled computers so we can’t operate at 100-percent capacity for eight hours per day, five days per week, indefinitely. And at some point, the double and triple checks won’t save you from making uncharacteristic, embarrassing mistakes.

If your stress is hurting your work performance, working more isn’t the solution. Give your mind a break, and it’ll pay off in the form of better attention and creativity all week long.

03. You’re showing physical signs of stress.

Maybe you’ve mysteriously gained weight, maybe your face is breaking out, or you’re barely awake throughout the day, but you still can’t sleep at night.

All of these seemingly unrelated symptoms point to chronic stress. Emotional stress spikes our stress hormones and makes us sick. Brain fog, insomnia, anxiety: they’re as real as an ankle sprain, so treat them as such. The longer you wait to give yourself a break, the worse those symptoms will become.

One Netflix marathon won’t solve your long-term stress, but taking a day to prioritize and create some coping strategies — or do nothing at all — is a great place to start.

 DID YOU KNOW that Purely Elizabeth, one of the most recognizable gluten-free brands out there, is made by a real person whose actual name is Elizabeth? It’s true, we’ve met her, and she’s as cool as you’d expect a Colorado-based natural foods boss to be.

To us, the Purely Elizabeth brand symbolizes a key moment in the wellness lifestyle ‘movement’. It’s one of the very first gluten-free brands we remember seeing while grocery shopping around the time we launched The Chalkboard. Elizabeth Stein’s beautifully packaged bags of grain-free granola were a huge cue that wellness was about to go big — and we no longer had to sacrifice our love for well-designed goods in our pursuit of good health!

If you’re a Purely Elizabeth devotee you probably know what we’re talking about. Right off the bat, what is your favorite Purely Elizabeth product? Our OG Granola.

Talk to us about the beginnings of your journey! Grocery and wellness were so different when you started in 2009…

In the beginning, everything was so new to me, and incredibly enthralling. I dove in head first, no fear, ready to take on the world.

When I launched in 2009, there were very few healthy, gluten-free products on shelves and no one knew about chia seeds or coconut sugar. I remember having to explain these incredible ingredients to every retailer!

It’s incredible to think about how far we’ve come over the last 12 years and how energized I still remain each and every day. I feel the same passion and drive today that I did from the start.

What put us on the map immediately was the fact that we were offering something so unique at the time.

What was the first product you made? Assuming, one of the grain-free granolas?

Actually, I initially launched Purely Elizabeth with three muffin mixes and a pancake mix. The mixes were the first of their kind — made with millet flour, almond flour, chia, flax, hemp and coconut sugar. We launched granolas two years later in 2011.

When did you know you really had something? Do you remember there being a specific moment? 

We actually knew we had something consumers wanted from the beginning. I built the business demoing and sampling at live events, so that gave me instant feedback. We knew that people not only liked the product, but also thought it was different from what was available in the market.

Ultimately, the moment when I really thought we’d “made it” was when I got an email from Whole Foods saying they were pushing us out into every region (instead of just the four we were in), because our product sales were so incredibly strong.

Does your family help test the products? Do you put granolas or mixes past them while trialing new ideas?

My mom was actually the reason we started making granola. I made our Original Ancient Grain Granola recipe for her at home one day and we haven’t changed the recipe since.

Let’s talk about the granola. You basically transformed this food category in total. For those who are still apprehensive about granola from the days in which it was a processed sugar and oil bomb, set the record straight:

It’s all about ingredients. And we focus on using the best intentional ingredients, including coconut oil, coconut sugar, then a mix of organic gluten-free oats, quinoa, amaranth and chia.

Of course our grain-free granolas don’t use those grains and instead use a blend of cashews, pumpkin seeds and sunflower seeds.

Your Chocolate Sea Salt Probiotics granola is basically a food group unto itself. It’s so good. Is it a best-seller and how do you like to enjoy it yourself?

It’s actually our #2 selling granola. We launched it back in 2014 , and it was definitely one of the first food products to be made with probiotics. It’s funny because I don’t really like chocolate, but I absolutely love this flavor. I love it on top of smoothies or just straight out of the bag.

Making healthy products that people actually like must feel pretty great? Especially for those of us who require a gluten-free diet or have gluten-free kids.

We constantly have consumers reaching out to us to share how our products have made it easy for them to eat healthier without feeling like they need to sacrifice anything. Our priority when making new products is that taste comes first, but we also incorporate ingredients that are nutritionally beneficial on top of that.

You started off very gluten-free focused, but expanded to products that are keto-friendly or entirely grain-free as well. When did you decide to make those moves?

Adding grain-free products to our line up started in 2014 when we launched our grain-free granolas. At the time, they were also naturally Keto, but Keto was so niche, we didn’t even think about putting that on the packaging!

The intention for adding grain-free granola to our line-up really came from a personal desire as my own diet started to go more grain-free. When we think about the guardrails of our product lines, it really centers around my own personal dietary beliefs.

Fast forward to today and Purely Elizabeth is now in over 15,000 stores including Whole Foods, Target, Kroger and Walmart. What are you most stoked about in your business?

We are at an incredibly exciting phase of the business where we are reaching more consumers than I could have ever imagined and are truly able to help consumers on their wellness journey.

Today, I’m most stoked about our new podcast, Live Purely, where I’m able to share expert advice to help our community. Additionally, we’ve been working on some top secret innovation launching in 2022, that I absolutely can’t wait to share!

Your social media following includes an impressive mix of well-styled foodies and wellness content creators! What are people creating lately that impresses you the most?

I’ve always loved seeing the innovative ways our community uses our products in recipes. If I had to pick one, I would probably say cheesecake bars with a granola crust! It’s a simple swap, but tastes delicious and is versatile with all of our flavors of granola (you literally just blend up a bag of granola and add coconut oil!).

My favorite desserts are always centered around berries. This seasonal crisp is my absolute favorite, easy to swap in any fruit, and super quick to make.

Lastly, although you’re a pretty low-key founder — someone who basically prefers to be out on the trails living that lifestyle or creating new product than relentlessly hitting up the press, you nonetheless are a huge inspiration to brand founders in this space, especially women. What’s your best advice to those you ask lately?

One of the most important things I’ve realized recently is that having absolute passion and conviction for your product or service is essential when launching. That passion has carried me 12 years later! Knowing how consuming it is to have your own business, you have to realize in the beginning that this will be your baby and take up most of your everyday life. It’s a huge decision and commitment.
