Don't let a commitment to healthful eating keep you from enjoying the traditional recipe you love best. The truth is that some recipes can easily be 'cleaned up' by swapping out fake, processed ingredients for whole, nourishing ingredients that your body actually knows how to digest. Vani Hari a.k.a The Food Babe certainly knows this and shared an unexpected recipe for healthy artichoke dip with us when we interviewed her earlier this fall.
Artichokes are full of fiber and vitamin A and you'll gain a slew of benefits from the kale, garlic, coconut oil and a few spices. If you're dairy-free you could try plain coconut yogurt in place of the sour cream, plant-based Parmesan and avocado oil-based mayo instead!
Food Babe's Healthy Artichoke Dip
Ingredients:
1 bag frozen artichoke hearts, thawed and chopped
4 cups finely chopped kale
1 garlic clove, minced
1 cup organic sour cream
3 tablespoons mayonnaise
3 tablespoons raw Parmesan, plus more to top
1 tablespoon coconut oil
1 teaspoon sea salt
1 teaspoon ground black pepper 1⁄8 teaspoon ground nutmeg
1⁄8 teaspoon cayenne pepper
Instructions:
Preheat the oven to 375°F. Grease an 8 x 8-inch baking dish with coconut oil.
Place all the ingredients in a large bowl and mix well to combine.
Pour the mixture into the greased baking dish and top with additional Parmesan cheese, if desired.
Cover and bake for 30 to 45 minutes.
Remove the dip from the oven and let sit for at least 5 minutes before serving.
